Ingredients
- 1 ¾ Cups Flour
- 1 Cup Sugar
- ½ Cup Brown Sugar
- 1 Teaspoon Baking Soda
- ½ Teaspoon Salt
- 3 Teaspoons Cinnamon
- 1/4 Teaspoon Ground Cloves
- 2 Eggs
- 1 Can (15oz) Pumpkin Puree
- ½ Cup Melted Coconut Oil
- 1 Teaspoon Vanilla Extract
Instructions
- Preheat the oven to 375 degrees and line a mini muffin pan with baking cups.
- Whisk together the dry ingredients and in a separate bowl whisk together the wet ingredients.
- Pour the wet ingredients into the dry ingredients and stir to combine.
- Scoop approximately 1 tablespoon of the batter into each muffin cup.
- Bake for 10-11 minutes or until a toothpick inserted into the center of the muffins comes out clean.
