You feel like you’re eating pasta, but don’t have to worry about all of the carbs. Does life get any better? To make it you need 2 zucchinis, a Julienne Slicer, 1 cup cherry tomatoes, ½ cup walnuts, 2 cups basil, 2 tablespoons minced garlic, ¼ cup olive oil, 1 tablespoon lemon juice, and salt and pepper to taste. Begin by using the Julienne Slicer to slice your zucchini into pasta pieces; set aside. Next, combine the walnuts, basil, minced garlic, olive oil, lemon juice, and salt and pepper to taste in a food processor. Pulse until all the ingredients blend together. Voila! You’ve just made the pesto. That was easy right? Add olive oil to a medium pan and sauté the zucchini pasta and pesto for 3-5 minutes, tossing to combine. Remove from heat and top with halved cherry tomatoes. Enjoy every bite of your faux pasta!
