Heat the oven to 225 degrees and line a baking sheet with parchment paper. Slice the zucchini into extremely thin slices and place them onto a paper towel. Pat with another paper towel to absorb the moisture, this will help make the chips crispy. Place the zucchini onto the baking sheet lined with parchment paper and brush each slice with olive oil. Next, sprinkle with salt and cayenne pepper.

Place in the oven and allow to bake for approximately 2 hours or until the zucchini is crisp. Allow to cool and serve!
