Cooking in the kitchen for an extended period of time in the summer months can be hot and exhausting. That’s why we’ve been dreaming up cool (in every sense of the word) recipes that don’t involve a lot of cook time — meaning you can spend way more time outside in the sunshine! Our first summer creation? Prosciutto and Goat Cheese Watermelon Pizza! This super yummy dish is something littles can enjoy outside or in (Zelda was running around the kitchen eating slice after slice, enjoying every bite!). This is an easy one for the babes to join in on making, so roll up your sleeves and get ready to make this tasty pizza.

- Prep Time: 10 minutes
- Yields: 1 Pizza
1. Preheat the oven to 350 degrees and place the prosciutto on a greased baking pan.
2. Bake the prosciutto until crispy, about 4-6 minutes. Remove from the oven and allow to cool, and then crumble.
3. Cut a whole watermelon in half. Cut a section from the center, approximately 1 inch thick. This will be your “pizza”.
4. Lay flat and cut slices using a pizza cutter. Top with the crumbled prosciutto, goat cheese, blueberries, sliced bananas and torn mint leaves.
5. Serve to your babes!
