Watermelon Gazpacho

ingredients
  • 1/2 Watermelon
  • 1/2 Cucumber
  • 1 Tomato
  • 1 Shallot
  • 1/4 Cup Chopped Basil Leaves
  • 2 Tablespoons Red Wine Vinegar
  • 1/4 Teaspoon Salt
  • Dash of Hot Sauce
instructions
  1. Begin by chopping the watermelon into cubes and place it in a blender and blend.
  2. Pour the pureed mix into a bowl and set aside.
  3. Next, cut the cucumber in half and remove the seeds and skin. Chop the cucumber into smaller pieces and place in the blender. Chop the tomato and the shallots and cut into quarters; add into the blender with 1/4 cup basil leaves and blend until smooth.
  4. Mix the pureed watermelon with this mixture. Stir in 2 tablespoons red wine vinegar, 1/4 teaspoon salt, and a few dashes of hot sauce. Place in the refrigerator until chilled (approximately 3 hours). Serve cold and garnish with olive oil and basil!
