Begin by sautéing the chopped white onion and tomatoes in olive oil on medium heat, until the veggies are tender. Season with salt to taste.
In a separate pan, sauté the soup mix in olive oil (approximately 5-7 minutes). While the veggies are cooking, bring 32 oz. chicken broth to a boil. Combine the tomato/onion mixture with the soup mix and place in the chicken broth. Turn down the heat and allow to simmer for 20-30 minutes, stirring occasionally.
