There are few things I love more than making appetizers with Zelda. These three easy finger foods are perfect for lunch, dinner or snack time! Salami bites are something Zelda can put together on her own while I do all the chopping for the loaded sweet potato rounds and the spinach balls. I’ll warn you, these loaded sweet potato rounds are dangerous — you definitely won’t have leftovers. They are almost too easy to make! Salami Bites

ingredients
  • 10 Pieces Salami
  • 10 Pieces Cheddar, Cubed
  • 10 Black Olives
instructions
  1. Place a black olive on a toothpick, followed by a piece of folded salami and then a cube of cheese.
  2. Repeat until you've used all the ingredients.

Loaded Sweet Potato Rounds

ingredients
  • 1 Sweet Potato, Peeled and Sliced
  • 6 Pieces Bacon, Cooked
  • 1/4 Cup Sour Cream
  • 3 Tablespoons Green Onion, Chopped
  • 1 Tablespoon Cornstarch
  • Salt & Pepper
  • 1/2 Cup Olive Oil
instructions
  1. Preheat the oven to 425 degrees.
  2. Toss the sliced sweet potatoes with the olive oil, cornstarch, salt and pepper.
  3. Place the sweet potatoes on a baking sheet lined with parchment paper in an even layer.
  4. Bake for 15 minutes, flip, and then bake for another 15 minutes or until golden brown.
  5. Top with a dollop of sour cream, a sprinkle of green onion and crumbled bacon.

Spinach Balls

  • 2 Cups Spinach, Chopped
  • 1/2 Cup Melted Butter
  • 2 Eggs
  • 1/2 White Onion, Chopped
  • 1 Cup Breadcrumbs
  • 1/4 Cup Shredded Parmesan
  • 2 Tablespoons Minced Garlic
instructions
  1. Mix all the ingredients together in a large bowl.
  2. Form 1/2 inch thick balls until you've used all the mix.
  3. Place in the fridge for 1 hour.
  4. Preheat the oven to 350 degrees and bake for 30 minutes.
  5. Serve to your family!
