For Thanksgiving we took a nontraditional route and had our meal catered by Real Urban BBQ. It gave us more time together as a family and saved my mom a ton of stress. She was so happy in the days leading up knowing she wouldn’t be in the kitchen all day! Even with all the yumminess, leftovers were expected. (Sometimes I think Thanksgiving food tastes better the day after anyways!) Last year, the day after Thanksgiving we recreated our meal into delicious bagel sandwiches.
This time around, I packed our dinner into Leftover Thanksgiving Quesadillas. This recipe works even if you need to switch around a few ingredients in accordance with your side dishes! We spread sweet potatoes on a tortilla and topped it with leftover turkey, cranberries, a sprinkle of basil and toasted garlic breadcrumbs. Even if you don’t have toasted breadcrumbs on your tabletop, I recommend whipping these up as they are very tasty and easy to make. It adds a spectacular crispiness to the meal. Leftover Thanksgiving Quesadillas

ingredients
  • Leftover Thanksgiving Turkey
  • ½ Cup Cooked Cranberries
  • 4 Small Tortilla Shells
  • Cooked Sweet Potatoes
  • 1 Tablespoon Minced Garlic
  • ¼ Cup Breadcrumbs
  • 5-6 Basil Leaves
  • 5 Tablespoons Butter
instructions
  1. Using a knife, spread the cooked sweet potatoes on each tortilla shell.
  2. Heat 1 tablespoon butter in a skillet over medium heat and evenly distribute throughout the pan. Add the minced garlic and breadcrumbs; repeatedly mix together until the breadcrumbs are toasted. Place in a bowl and set aside.
  3. Top the sweet potato tortilla shell with pieces of cooked Thanksgiving turkey, cooked cranberries and the toasted garlic breadcrumbs. Top with torn pieces of basil leaf.
  4. Clean the skillet and add another tablespoon of butter. Heat over medium heat and evenly distribute throughout the pan. Place the Thanksgiving tortilla in the skillet and allow to cook for 1-2 minutes. Use a knife and spatula to fold in half and cook for 2 more minutes and flip; cook for another two minutes. The shell should be golden brown on both sides.
  5. Use a pizza cutter to slice the tortilla in half and top with toasted garlic breadcrumbs and sprinkle with basil.
  6. Repeat this process until you have your desired number of quesadillas.
  7. Serve to your family the day after Thanksgiving!
