Summer is so close we can taste it! (Literally, this salad tastes like everything we LOVE about summer.) Strawberry Summer Arugula Summer Salad is bright, fresh, and is like eating a little bit of sunshine on a plate. And who couldn’t use a little bit of brightening after so many days at home? One of the things Zelda and I have been enjoying about being at home (besides all the Instagram LIVE! sales) is whipping up new creations in the kitchen. Salads are fun for us to make together because while I do the chopping, Zelda is able to do the mixing. You can make this salad a few hours ahead and pop it in the fridge but don’t wait too long to eat it or everything starts to lose its freshness. We recommend popping the salad in the fridge for about 10 minutes before serving so it is nice and cold–dressing on the side. What is your go-to summer salad recipe? Strawberry Arugula Summer Salad

The perfect summer salad!

  • 5-6 Cups Arugula
  • 1 Pint Strawberries, Quartered with Tops Removed
  • 1/4 Cup Green Onion, Sliced
  • 1/4 Cup Pine Nuts
  • 1/4 Cup Chopped Walnuts
  • 1 Avocado, Cubed
  • 4oz. Goat Cheese, Crumbled
  • 6 Radishes, Sliced
  • Balsamic Vinaigrette
  1. Cut/chop the fruits, vegetables, and walnuts (we used scissors for the green onion).
  2. Toss all the ingredients, except for the dressing, together in a large bowl. 
  3. Transfer to a serving bowl and top with extra goat cheese.
  4. Serve with dressing on the side!
