Her Salmon & Mashed Sweet Potatoes recipe is out of this world, we can see why her kids have been hooked on it since they were babies. To make two servings you need 2 small salmon fillets, olive oil, butter, salt and pepper, and 2 sweet potatoes. Begin by bringing water to a boil over high heat and drop in the sweet potatoes. Allow them to boil for 15-20 minutes, depending on how large they are (they need to be soft). Meanwhile, preheat the oven to 425 degrees. Place the salmon fillets on a baking sheet lined with parchment paper, and season with salt and pepper to taste. Next, place a small slice of butter on top of each fillet and bake for 20-25 minutes. Once the sweet potatoes are tender, remove them from the heat and place them in a bowl with half a stick of butter (the butter is optional); mash and combine using a hand mixer. Remove the salmon from the oven and garnish with rosemary. Serve this yummy dish to your family for dinner!
