This Pomegranate Arugula Salad is the perfect healthy substitute for all of those sweet treats floating around this time of the year.  Pomegranate seeds taste like candy but have been recommended by nutritionists to help in weight reduction and are also packed with vitamin-C!
To make this amazing salad (which makes a perfect Thanksgiving side!) you need 1 ½ tablespoons lemon juice, 1 ½ tablespoons honey, 1 ½ tablespoons red wine vinegar, 1/4 cup olive oil, salt and pepper, 2 cups arugula, ½ cup pomegranate seeds, 2 tablespoons grated Parmigiano-Reggiano cheese, 2 tablespoons chopped and roasted walnuts, 1 teaspoon diced shallot.  Please note this recipe is for 1 serving.

Whisk together 1 ½ tablespoons lemon juice, 1 ½ tablespoons honey, and 1 ½ tablespoons red wine vinegar. Slowly add ¼ cup of olive oil and whisk together. Season with salt and pepper to taste and set aside. This will be your dressing.

On medium heat, roast 2 tablespoons chopped walnuts and 1 teaspoon diced shallots in a pan for approximately 3 minutes. Remove from heat. In a bowl combine 2 cupsarugula, ½ cup pomegranate seeds, 2 tablespoons grated Parmigiano-Reggiano cheese, roasted walnuts and shallots, and dressing. Toss to combine.  Enjoy your delicious guilt-free salad!
