Nothing says I love you quite like rainbows, sprinkles and white chocolate chips. And while these won’t get you the health-conscious parent of the year award, they will score you major points with your little one. Who can resist something this pretty? As far as granola bars go, these are on the candy bar end of the spectrum but with a few substitutes they easily be made less sweet. We just couldn’t resist making a unicorn version!
I never knew how easy it was to make no bake granola bars at home. If you want to create these with a healthier twist, simply substitute the rainbow marshmallows with dried fruit, use nuts instead of chocolate chips and skip the sprinkles. No Bake Unicorn Granola Bars

Nothing says I love you quite like no bake granola bars with rainbows, sprinkles and white chocolate chips. Who can resist something this pretty?

ingredients
  • 2 Cups Oats
  • ¼ Cup Almond Butter
  • ½ Cup Peanut Butter
  • ¼ Cup Honey
  • ¼ Cup White Chocolate Chips
  • 1 Teaspoon Vanilla
  • 1 Teaspoon Cinnamon
  • Rainbow Lucky Charms Marshmallows
  • Sprinkles
instructions
  1. In a bowl, combine oats, almond butter, peanut butter, honey, white chocolate chips, vanilla and cinnamon.
  2. Firmly press a piece of parchment paper into an 8x8 pan. The parchment paper should come over the edges. Pack the granola mix inside of the pan and press the rainbow lucky charms onto the top; dust with sprinkles.
  3. Place in the freezer for 1 hour or until firm. Once firm, pull the parchment paper up with the granola. Slice into rectangles using a cookie cutter. Give to little ones or wrap and store in the fridge!
