Mac N’ Cheese Cupcakes are the perfect way to get your little ones to eat their veggies! They are also packed with protein and are a fun recipe to make with your babes. You need cooking spray, 2 cups panko, 1 tablespoon olive oil, 8 ounces ground turkey, ½ teaspoon salt, ¼ teaspoon pepper, 8 ounces pasta shells, 2 cups grated Parmesan,1 ½ cups grated white cheddar, 1 cup cherry tomatoes, and 2 cups chopped frozen broccoli. Begin by heating the oven to 375 degrees. Next, line a cupcake pan with cupcake liners and spray with cooking spray. Heat the oven to 375 degrees and coat the liners with panko, set aside. Place olive oil in a skillet and cook the ground turkey on medium heat. Season with salt and pepper; flipping the meat over frequently until cooked through. Cover and set aside. Meanwhile, chop the broccoli into small pieces and cut the cherry tomatoes in half, set aside. Bring a large pot of water to a boil, and add the pasta; sprinkle with salt. Cook the pasta until it is tender but firm, drain and place into a bowl. Stir in the cooked turkey and the cheese; season with salt and pepper. Spoon the mixture into the cupcake molds, filling them ¾ of the way. Place chopped cherry tomatoes and broccoli on top of each cup. Sprinkle panko on top and drizzle with olive oil. Allow to bake for approximately 20 minutes, or until the tops are golden brown. Remove from heat, allow to cool and serve to your little ones!
