I made Huevos Rancheros for the first time this past weekend and fell in love. This is breakfast with a kick! I love that it’s healthy but still full of flavor. To make it you need 1 tomato, 1 onion, diced jalapeno pepper, 1 tablespoon minced garlic, 1 tablespoon hot sauce, 1 teaspoon ground cumin, salt and pepper, olive oil, 1 can of black beans (washed and drained), 4 eggs, 4 corn tortillas, feta cheese, and fresh cilantro. This recipe serves 4 people.

Begin by making the fresh salsa. Dice the tomatoes and onion and place them in a large bowl together. Add the diced jalapeno, minced garlic, hot sauce, cumin, and salt and pepper to taste. Next, place the mixture in a skillet with olive oil on low heat. Allow the salsa to cook until it thickens (approximately 5 minutes). Remove from the heat and set aside.
Cook the black beans in a skillet over low heat (approximately 5 minutes) and season with salt and pepper to taste. Remove from the heat and set aside.

Place olive oil in another skillet and fry the eggs sunny side up; season with salt and pepper to taste. Place the beans and salsa on top of the corn tortillas. Top with a fried egg, feta cheese, and chopped cilantro. Serve at brunch with a Bloody Mary!
