My What’s for Dinner series is back! Don’t worry, I haven’t completely fallen off the wagon, we’ve just had an absolutely insane few weeks between lots of house guests (one from hell, which I’ll tell you all about in an upcoming blog post), Zelda graduating preschool and working on our Glitter and Bubbles rebrand that is launching in a few weeks, which I am SO excited about! More details coming on that very soon, so stay tuned!
Anyway, coming off the heels of our Hawaiian pizza party lunch, I was inspired to continue the Hawaiian theme into dinner because Spiro wasn’t able to join us earlier in the day. It turned into something magical that I knew I had to share with you guys ASAP, so here it is!
First, we have Hawaiian Fried Rice from The Recipe Critic. Zelda absolutely loves rice but has been stuck on mainly eating just plain white rice. I wanted to mix it up for her, so we threw some rice in the rice cooker (if you don’t have one of these, you need one immediately!), added in some veggies, pineapple and chopped ham along with oil and soy sauce. And that’s legit all we did. It turned out amazing! It also worked insanely well as leftovers, so make a big batch and you’ll be set for a few days!
Second, we made Hawaiian Salsa with Mango and Tomato from Whole Sisters. This will be the salsa of your summer, I swear! It’s so easy to make and tastes BOMB. Plus, can we talk about the presentation? How fun is that?! All you do is scoop the fruit out of half a pineapple and people will think you’re some kind of Betty Crocker. When in reality all you did was basically cut a piece of fruit in half.
And in the spirit of doing fun things just because, we decided to take the glitter palm leaf cutouts, leaf serving trays, the bright table cloth and the leaf placemats straight from our Hawaiian lunch to dinner to add an extra dash of excitement! I can’t wait to keep using these Oriental Trading finds for all kinds of cool activities and meals!
And really quick before I share the recipes, a few items worth the splurge:
Rice cooker – This rice cooker will change your life, or at least your dinners. Making rice will no longer be a major pain in the ass – promise.
Blender – This is the best blender you can get at this price point. I swear by mine!

- Use a rice cooker or large pot to start cooking the rice according to the package directions.
- When your rice is almost done, break out a large skillet and begin preheating it at medium. Add your vegetable oil to the skillet. Once hot, place the red bell pepper, white onion and ham into the skillet and fry to it's all tender.
- Once those are cooked, move the ham and veggie mixture off to one side of the pan. In the other half of the skillet, pour in your eggs and scramble them. When your eggs are all scrambled, mix the eggs and the veggies together well.
- Now toss in your cooked rice and pineapple to the egg and veggies. Add in the soy sauce and sesame oil. Stir well so that everything is mixed together and coated well.
- Use the green onions as your garnish.
Zelda’s Toddler Task: She is in charge of cracking the eggs (she is really good!) and dumping all the ingredients into the bowl.

- 3-4 Medium Tomatoes
- ½ Orange Bell Pepper
- ½ Purple Onion
- 1 Jalapeno, Seeds Removed
- ½ Bunch Cilantro
- ½ Tablespoon Minced Garlic
- ½ Teaspoon Cumin
- ½ Tablespoon Salt
- 3 Limes, Juiced
To Top the Salsa
- ½ Purple Onion, Diced
- ½ Diced Orange Pepper
- 1 Mango, Diced
- 1 Tomato, Diced
- ½ Pineapple, Diced
- ½ Bunch Cilantro, Chopped
- This one is so simple, and really good! Add the top list of ingredients to the blender, and blend. This is a salsa you want a bit thicker and chunkier, so make sure you don't overdo it!
- Place the salsa into a serving bowl of your choice. Stir in the second list of ingredients that you chopped up, mixing everything well.
