My fiancé Spiro is Greek so Greek food is always happening at our house (which I love), and one of my favorite dishes that he makes is a traditional Greek salad. I love the saltiness of the tomatoes combined with the feta, olives, and cucumbers – it’s one of my favorite flavor combinations.
When I discovered the recipe for Greek Salad Skewers I was so excited to try it, I knew it was going to be bite sized perfection! It was an instant hit in our house and they only take a few minutes to assemble.
Greek Salad Skewers

- Begin by cutting the cherry tomatoes in half and spread them out in one layer on a piece of tinfoil. Spray (or brush) with olive oil and then sprinkle with salt to taste. Cut the cucumber into slices and then quarter each slice.
- Next, place half a cherry tomato on a skewer, followed by a slice of feta cheese, a Kalamata olive, the other cherry tomato half, and 2 cucumber quarters. Repeat this process until you have the desired amount of skewers and then sprinkle with a dash more salt.
- Serve to guests or eat as an appetizer around the dinner table!
