Surprise! This week’s dinner series installment is being flipped to breakfast. Don’t worry, I’m not giving up on sharing my dinner recipes, but last week Zelda was on spring break and we had guests staying with us and breakfast just seemed to be the most important meal to have ready for everyone. So, I kind of went outside my comfort zone and dove headfirst into some breakfast recipes.
Honestly, I’m not personally a breakfast person and I’m kind of intimidated by all the technique that can go into preparing breakfast food, but there I was with a house full of people that needed food in their bellies to start the day. I could have just put out some chopped fruit and flipped some box mix pancakes, but after a day or two that gets pretty old in my opinion. I wanted to do something more!
After doing some quick research, I found two AMAZING recipes that I have a feeling will get added to our rotating breakfast roster.
The first is this mouthwatering Sausage and Biscuit Casserole Bake. It’s like two of everyone’s favorite breakfast meals wrapped into one delicious dish and it couldn’t have been a bigger hit. To get Zelda involved in the process, I gave her a small plastic knife and she cut the biscuits into pieces for me. She loved it and it kept her occupied while I was cooking.
If you have guests coming in from out of town, I highly recommend adding this to your menu while they’re there. It will fill everyone up and is very inexpensive to make.
The second recipe I’m sharing is a Taco Brunch Bake. Now, I know what you’re probably thinking – a taco bake isn’t breakfast. Yes, that’s true, but we all agreed it made for a fantastic brunch meal because of the Bisquick in it. And I mean, I don’t know about you, but I will eat tacos at any time of day. It also heats up really nicely for leftovers, which makes it even better.
As for the kids, have them set up the condiment station for you. I gave Zelda a few bowls and she put out the cheese, black olives, lettuce, etc.
A few things I recommend for making these dishes and would be worth the purchase include:
Staub Ceramic Baking Dish – I purchased these recently as I really started getting in the kitchen more and have used them almost every single week. They help to cook your meal perfectly and look really pretty too. Bloomingdale’s always has these on sale, so if they aren’t marked down when you click the link, hold off to get a better deal.
Stainless Steel Utensil Set – This set is really practical, but also includes some utensils you might not already have. I’ve found the shape of the spatula to be perfect for getting heavy casserole servings out of pans without having them fall apart.
These dishes are fabulous and I can’t recommend them enough! If you’re here looking for a dinner recipe, I think either of these would be great for a “breakfast for dinner” kind of situation too! I’ll be back next with more recipes, but I hope you enjoy these in the meantime!
- 1 Package Grands Biscuits
- 2.75 oz Package Peppered Gravy Mix
- 6 Eggs
- 1 Pound Ground Sausage, Spicy or Mild
- 1 Cup Shredded Cheddar
- 1/2 Cup Whole Milk
- Salt & Pepper to Taste
- Preheat your oven to 350 degrees.
- Grease a 13 x9 pan.
- On your stovetop brown the sausage til cooked, and then drain.
- Cut biscuit dough into 1″ pieces, then place the biscuits in the bottom of your pan.
- Add the sausage over the biscuits.
- Then add the cheese over the sausage.
- In a separate bowl, whisk together the milk and eggs til thoroughly mixed. Add in salt and pepper
- Pour egg mixture over the biscuits.
- Make gravy according to instructions, and pour over biscuits.
- Bake for 35-45 minutes, or until eggs and biscuits are cooked through.
- How Zelda Helped: Cut the biscuits into sections with a plastic knife.
- 2 Pounds Ground Beef
- 1 Packet Taco Seasoning
- 4 Eggs
- 3/4 Cup Whole Milk
- 1 3/4 Cups Bisquick
- Sour cream- 1/2 cup
- 2 Cups Shredded Lettuce
- 1 Cup Cherub Tomatoes
- 2 Cups Shredded Cheddar Cheese
- Black Olives, Optional (We used and it was delish!)
- Green Chilies, Optional (Not in the original recipe but we had on hand and was so good!)
- Salt & Pepper to Taste
- Heat your oven to 400 degrees. Lightly grease a 9 x13-inch baking dish.
- In a large bowl, beat eggs and milk together until well mixed. Then add in biscuit mix, and salt and pepper. Mix thoroughly.
- On the skillet, cook the ground beef until browned. Season with salt and pepper. Once finished, drain the beef.
- Place beef in an even layer in the baking dish, then spread biscuit mix in an even layer on top of the beef.
- Place the dish in the oven and bake until the biscuit looks golden brown, around 20-25 minutes.
- Take the dish out of the oven and let it cool.
- We set the toppings out in individual little bowls so everyone could customize!
