Egg-Sandwich Begin by brushing a skillet with olive oil and cook the bacon over medium heat, until crispy. Remove from heat and set aside. Next, in a small bowl, whisk 2 eggs with 2 tablespoons of skim milk. Brush a separate skillet with olive oil and pour in the egg/milk mixture, allow to cook on medium heat. Use a spatula to lift and chop the eggs.

While the eggs are cooking, toast an English muffin. Cut the bacon in half and place on one half of the English muffin. Top with scrambled eggs and cheese. Place the other half of the English muffin on top and serve to your little one!
