Heather Magidsohn’s daughter Zelda (awesome name, right?) will eat whatever she is having, which makes finding recipes for the entire family to enjoy a breeze! She credits Weelicious’ Edamame Salsa with bringing endless happiness to her home when it comes time for appetizers, and we have to say we can totally see why. After making it ourselves (and eating it right out of the bowl), we think it goes great on chips, but can also double as a delicious veggie salad. To make it you need 1 ½ cups shelled edamame, 1 cup corn, 3 diced roma tomatoes, ¼ cup chopped cilantro, 1 crushed garlic clove, ½ medium diced red onion, ½ diced and seeded jalapeno, 1 tablespoon olive oil, 1 tablespoon balsamic vinegar, 2 teaspoons lime juice, and salt and pepper. Combine all of the ingredients in a large bowl and refrigerate for at least two hours. Remove from the refrigerator and serve to guests with chips, or eat as is! No matter how you choose to eat it, it’s absolutely delicious.
