Cranberry Avocado Salsa is a fun and unexpected dish to present to your guests on Thanksgiving. I also love making my own tortilla chips to go with it, everything is so much better when it is homemade! To make this delicious dish you need 1 package mini tortillas, olive oil, salt and pepper, 3 tablespoons chopped cilantro, ¾ cup driedcranberries, 2 avocados, ¼ cup chopped red onion, 2 tablespoons minced jalapeno, 2 tablespoons honey, and 1 tablespoon lime juice.

Begin by preheating the oven to 450 degrees. Cut the mini tortilla shells in half and then into triangles (like pizza slices). Place parchment paper on a baking sheet and cover with the tortilla triangles. Brush with olive oil and sprinkle with salt and pepper to taste. Let them bake for approximately 2 minutes (or until they are golden brown) and then flip them over. Let them bake for approximately 2 more minutes and then remove them from the oven. Set aside.
In a large bowl, whisk together the honey, lime juice, minced jalapeno, and red onion. Cut the avocados into small cubes and add into the mixture. Once combined add thecranberries and cilantro; season with salt and pepper. Toss to combine. Serve this delicious salsa to friends and family!
