Cherry Tomatoes Stuffed with Chicken Apple Salad is the perfect party bite! These adorable appetizers are delicious and easy to eat. To make this delectable dish you need 1 chicken breast, water, cherry tomatoes, 2 Granny Smith apples, 1 teaspoon lemon juice, salt and pepper, ½ teaspoon cinnamon, 3 tablespoons mayonnaise, 2 teaspoons chopped parsley leaves, and rosemary to garnish.

Begin by placing the chicken breast into a pot of boiling water. Allow the chicken to poach until cooked through (approximately 10-15 minutes). Remove from the water and allow it to cool.
Meanwhile, chop the Granny Smith apples into very small pieces and place in a bowl. Cover with the lemon juice. Once the chicken has cooled, chop it into small pieces and add it to the apple mixture. Combine with salt and pepper, cinnamon, mayonnaise, and chopped parsley.

Using a knife cut off the tops of the cherry tomatoes and scoop out the seeds. I did this using a snail fork. You may also need to cut off a very small portion of the bottom to make them stand up, just be sure not to puncture all the way through! Stuff the cherry tomatoes with the chicken salad and garnish with small pieces of rosemary (I cut each leaf in half). Serve to guests!
