As I’m nearing the end of my post-baby weight loss venture (only a few more pounds to go) I’ve been on the hunt for quick and easy recipes, and was beyond thrilled when I found Black Bean and Corn Salad. It fits the bill on both accounts!
To make this you need 2 cups black beans (drained and rinsed), 2 cups canned corn (rinsed and drained), 1/3 cup red onion, ¼ cup chopped cilantro, 3 tablespoons lime juice, 1 teaspoon olive oil, ½ teaspoon salt, ½ teaspoon ground cumin, and 1/8 teaspoon ground red pepper.
Combine all of the ingredients in a large bowl and mix together. Refrigerate for 5-7 hours (or overnight).
Enjoy this healthy, low-fat, and delicious salad!
