I cannot say enough good things about Baked Zucchini Flatbread! This is quickly becoming one my lunch time favorites. It’s a great alternative to pita and hummus and all of the ingredients balance each other perfectly! To make it you need pita bread, olive oil, salt and pepper, lemon, hummus, arugula, almonds, and goat cheese.
Preheat the oven to 400 degrees. Slice the zucchini into 1/4 inch thick slices and place on a baking sheet lined with parchment paper. Brush the slices with olive oil and season to taste with salt and pepper. Bake in the oven for approximately 20 to 25 minutes.
When the zucchini has approximately 5 minutes left, warm the pita on a griddle. Once the pita is warm remove it from the heat and spread hummus evenly on top. Top with arugula, goat cheese, almonds, and zucchini slices. Serve with a wedge of lemon!
