You haven’t had muffins until you’ve had Apple Streusel muffins. This organic recipe is made using muffin mix from Abe’s Market, and it’s beyond delicious. It’s perfect for kiddos who struggle with allergies, as it is corn, peanut, yeast, soy, and tree nut free. The mix uses all natural ingredients — just add eggs, Granny Smith apples, vegetable oil, and water. Apple-Streusel-Muffins Begin by preheating the oven to 375 degrees. Dice 1 ½ large Granny Smith apples into ¼ inch cubes and set aside.  In a large bowl, combine the Everything but the Apples Batter Packet, ½ cup vegetable oil, and ¼ cup water. Mix thoroughly and then add in the diced apples, the batter should be thick. Set aside. Muffin-Mix Next, prepare the streusel in a separate bowl by mixing together the Streusel Packet with 2 tablespoons vegetable oil. Streusel-Mix Spoon the muffin batter evenly into a lined muffin pan, and use the back of a spoon to firmly press the mixture down into the muffin liners. Top with the streusel mix, covering the top of each muffin. Apple-Muffin Bake the muffins for 20-23 minutes or until a toothpick inserted into the muffins comes out clean.
