25 Days of Treats: Apple Pancakes

There are few things that smell better than Mini Apple Pancakes made with yogurt batter! To make these delicious morsels you need ½ cup flour, ¼ teaspoon baking powder, ¼ teaspoon salt, ½ cup plain yogurt, 1 egg, apples, canola oil, ¼ cup sugar, and 2 teaspoons cinnamon. In a small bowl mix together the flour, baking powder and salt, set aside. In another bowl whisk together the yogurt and the egg. Whisk the two mixtures together until combined. Cut the apples horizontally into ¼ inch thick slices and set aside. Place canola oil in a medium skillet on medium heat. Dip the apple slices into the yogurt apple batter and place them on the skillet. Allow them to cook until golden brown, flipping occasionally to cook both sides. Enjoy with family!
