Shake things up a bit at the kid’s table by serving Turkey Meatballs instead of a traditional Thanksgiving turkey. Your little ones will thank you! To make these delicious meatballs you need 1 pound of ground turkey, ½ cup panko, 2 tablespoons finely chopped carrots, 2 tablespoons finely chopped zucchini, 2 tablespoons finely chopped onion, 1 large egg, 1 ½ tablespoons Italian seasoning, olive oil, and 15 oz. chicken broth. Using your hands, mix the ground turkey, panko, zucchini, onions, eggs, carrots, and Italian seasoning in a large bowl; season with salt and pepper to taste. Form the mixture into 1inch balls. Coat a large skillet with olive oil and set to medium heat. Cook the meatballs for approximately 4 minutes and then turn. Once the meatballs begin to brown, add in ¼ cup chicken broth. Reduce the heat and cover until the liquid is absorbed. Slowly add the remaining chicken broth and allow them to cook uncovered until the liquid is absorbed and the meatballs are golden brown (turning them occasionally). Serve to your little ones!
