I absolutely love sitting in my pajamas on a cold day, while enjoying a warm and delicious bowl of Chicken Noodle Soup. It instantly reminds me of my mom, and I can’t wait to pass that feeling down to Zelda when she gets old enough to try it! To make my favorite simple soup you need 1 large chicken breast, 1 box (.32 oz.) chicken broth, 3 carrots (peeled), 2 ribs of celery, ½ a white onion, 2 tablespoons minced garlic, olive oil, salt and pepper, and egg noodles. Chicken-Noodle-Soup-Ingredients Begin by patting a chicken breast dry and seasoning it with salt and pepper. Next, place ¾ cup water in a sauté pan on medium heat; place the chicken breast into the water. Allow the chicken to cook for 5 minutes and then flip it over and cover the pan. Allow it to cook for 5 more minutes and then uncover and add ¾ cup water. Repeat this process until the chicken is cooked through. Remove from the heat, allow the chicken to cool, and pull it apart (so that it is shredded). Set aside. Next, pour chicken broth into a large pot and bring it to a boil. Once boiling, place the egg noodles in the pot and turn the heat down so that the broth is simmering; add salt to taste. Allow the egg noodles to cook, until they reach your desired texture (around 10-13 minutes). chicken-soup-veggies Meanwhile, while the egg noodles are cooking, chop carrots, onions, and celery and sauté in a pan with olive oil and minced garlic on medium heat, until the veggies are tender (around 5 minutes); season with salt and pepper to taste.  Once the noodles have around 3 minutes left to cook, add the veggies and chicken to the pot; season with salt.
