As I’ve mentioned before Zelda is a rockstar when it comes to eating her veggies. And with her willingness to expand her palate, I’ve been branching out with what I’ve been giving her to eat. These Bacon & Dill Cucumber Roll Ups were our most recent venture into uncharted territory. As I suspected she might, she ended up dismantling the roll and only eating the tomatoes and cucumbers, but at least we tried! I, on the other hand, enjoyed every last bite of these delicious little rolls. They are perfect to serve as an appetizer or enjoy as a midday snack!
SUPPLIES
- Prep time: 20min
- Yield: 4-6 servings
- 3 Cucumbers
- 6-8 Slices of Bacon, Cooked & Crumbled
- 1 Cup Ricotta Cheese
- 1 Package Cream Cheese
- 2 Tablespoons Dill
- 10-12 Cherry Tomatoes
- Salt & Pepper
- Cut the cucumbers in half, width-wise, and then use a Mandolin slicer to cut thin slices, length-wise. Set aside.
- In a large bowl, mix together cream cheese, ricotta cheese, dill, cherry tomatoes (sliced into thirds) and cooked and crumbled bacon. Sprinkle with salt and pepper.
- Use a spoon to place a small dollop of the mixture onto a slice of cucumber and roll up. Secure with a toothpick.
- Repeat this until you are out of cucumber slices and serve!
