Words cannot describe how much I love this dish. I could eat it everyday for the rest of my life (and just might) and not get sick of it. The crispiness of the prosciutto pairs perfectly with the avocado toast and the strawberries compliment this combo to give it an elevated flavor. Seriously run, don’t walk, to the grocery store to buy the ingredients. You will thank me, I promise!
Toast-&-Avocado
To make this you need 1 package of prosciutto, 1 avocado, 1 loaf of whole wheat bread, and 1 container of strawberries. This will make approximately 3 servings (2 pieces of toast in each serving). Cut off the tops of the strawberries and slice in half, set aside. Preheat the oven to 350 degrees.
Next, remove the skin and seed from the avocado. Cut into chunks and place in the food processor until the avocado becomes more of a spread, set aside. Place a piece of aluminum foil on a rimmed baking sheet and brush with olive oil. Arrange the strips of prosciutto on the baking sheet (it doesn’t matter if they are overlapping). Place in the oven for 12 minutes or until the prosciutto is crispy.
Avocado-and-Strawberries
When the prosciutto has approximately 3 minutes left in the oven, place the toast in the toaster. Remove the prosciutto from the oven and let cool for approximately 1-2 minutes. Remove the toast from the toaster and spread with the avocado, place the prosciutto on top. Enjoy with a side of strawberries!
