You really can’t beat a good pasta (especially one that has avocado and bacon on it). When eating pasta I often find that I can barely move when I finish, because the meal is so heavy. That’s why I was pleasantly surprised at how light and refreshing this dish was! This meal takes about 25 minutes to make and costs under $25 (5 servings).
To make this you need 8-10 oz. of bow tie pasta, 2 avocados, 1 package of bacon, 2/3 cup of cilantro, 2 tablespoons of lemon juice, 1 tablespoon of olive oil, 2 tablespoons of minced garlic, ¼ teaspoon of pepper, 1/3 teaspoon of salt, and ½ cup of grated Pecorino Romano cheese.
Pasta
Cook the pasta according to the directions on the box. Cook the bacon in a skillet on medium heat. While the bacon is cooking, remove the pit and skin from the avocados and cut into cubes. Set aside. Once the bacon is done cooking, break it into smaller pieces. In a large bowl, combine the avocado cubes, bacon bits, lemon juice, olive oil, minced garlic, pepper, salt, and cilantro.

Add the warm pasta to the mixture and toss to combine. Sprinkle the top with the grated Pecorino Romano cheese and serve!
